In Asia. it is known as "long-life tea"Many believe it has anti-ageing effects and is taken to soothe the body's reaction to allergies and rashes.
A Swedish botanist Carl Thunberg first saw the people of the Cape of south Africa make a tasty aromatic drink from the needle-like leaves of the wild plants specifically the rooibos plant. After harvest the plants were chopped up with axes and then bruised with heavy implements, the leaves would left to ferment before drying in the sun.
Rooibos seeds are planted during February and March. They are tended for 18 months, Upon summer harvest the leaves of the plant are trimmed and bruised ready for oxidisation, which much like the fermentation of tea allows the leaves to develop.
A green rooibos with a lighter, drier, flavour can be made from the same plant without undergoing the oxidisation process.
